Atsu-age

Description

"Age" is the name for fried tofu. "Atsu" represents the shape: a large block. The structure of this tofu is more firm than regular tofu because a lot of moisture evaporated during the frying. A piece of tofu of 250g is needed to produce 200g of atsu age. Despite the deep frying, atsu-age does not contain a lot of fat.

Preparation

Atsu-age tastes fantastic when put on a sandwich in slices without heating it, with some fresh vegetables and a spicy dressing. You can also slice it in cubes and use it in salades, soups or broths. It's also very easy to use atsu-age in warm dishes: just cut it up in little cubes and heat them in the ovenor in a pan.
