A meal should contain protein, carbohydrates, fats, vitamines, minerals,... . Seitan is rich in protein and can thus serve to up the protein content in your meals.

In Belgium and the rest of the western world, meat is being used as a main source of protein, but it has the disadvantage that is bundled with bad things, like cholesterol and saturated fats.

Seitan can be used as if it were meat: you can bake it, you can use it in a stew, you can grind it up, you can put a slice of seitan in a bun... Anything you can think of doing with meat, you can do with seitan.
